Banana Choc Cake - Vegan

Yes, you read it correctly. Overripe bananas are rich in antioxidants and provide numerous health beneficial nutrients. I have gone through so many articles praising about all its advantages that I had to incorporate ripen bananas back into our diet in a way that no one can resist. Banana choc cake did the trick.

INGREDIENTS
  • 300g/4 medium sized Ripe Bananas peeled

  • 1 ½ cup Plain Flour (or whole Wheat flour)

  • 1 ½ tsp Baking powder

  • ¼ tsp Baking soda

  • ¼ tsp Cardamom powder (optional)

  • ¼ tsp Salt

  • ½ cup Sugar

  • 2/3 cup Vegetable Oil or rice bran oil

  • 1 tsp Vanilla extract

  • 1/2 cup Chocolate chips ( use vegan chocolate for vegan or skip it)

  • 1/4 cup halved Walnuts (optional)

INSTRUCTIONS
  1. Preheat oven to 180°C.

  2. Peel Bananas. Add them to a bowl and mash with a fork or blend with a blender.

  3. Add Sugar, Oil, Salt, Cardamom powder and Vanilla extract.

  4. Stir very well so that sugar dissolves and oil mixes very well with Banana puree.

  5. Sieve Flour, Baking powder, and Baking soda directly into bowl of wet ingredients.

  6. Fold/mix dry ingredients into the wet ingredients very well (Do not beat or over mix).

  7. Add chocolate chips and or walnuts and mix again.

  8. Pour batter into greased loaf pan.

  9. Place it in oven for 45 to 50 mins or until the skewer when inserted in the centre comes out clean.

  10. Allow the cake to cool for 10 minutes before removing from pan.

  11. Slice and serve with tea or coffee

NOTES
  • Do not beat the batter or else it will go stretchy and gluteny

  • Dimensions of loaf pan: 9.5 x 5 x 2.5 inches

  • If eating the cake next day then I would suggest you to toast the slice a little and enjoy it warm with a cuppa.
