Beet Power Quinoa Idli

Let's have some fun with quinoa idli. Why not make it pink? No no no no... no artificial colour. Only natural ingredient - Beetroot powder for the colour and added health benefits. Serve it as a starter or as a main meal. This beauty is certain to turn heads.

INGREDIENTS
  • 1 cup Ground Quinoa

  • 2 tsp Beetroot Powder (can add one more tsp if you like more intense colour)

  • 1 cup Water

  • 1 tbsp Lemon Juice

  • 1 tsp Eno (or mix ½ tsp Baking soda with ½ tsp Citric Acid)

  • Salt to taste

INSTRUCTIONS
  1. Firstly, grind quinoa to a coarse texture. Make sure it is not too thick or too thin.

  2. Take coarsely ground quinoa in a large bowl, add beetroot powder and salt to taste.

  3. Now mix in water, small amount at a time to make thick idli batter. Note it shouldn't be too runny.

  4. The batter will be pink in colour.

  5. Leave it aside for 5-10 mins to stand.

  6. In the meanwhile, fill idli cooker/steamer with water and start boiling. Also grease the idli steamer plate (patrum).

  7. Now add lemon juice in the center of the batter. Do not mix it yet. Add eno (or mixture of baking soda and citric acid) over the lemon juice. It will start bubbling. Mix this through the batter quickly and thoroughly.

  8. Once mixed do not wait, spoon the batter in idli steamer plate (patrum).

  9. Place the steamer plate (patrum) in idli steamer, cover and steam for 12-14 mins.

  10. Remove idli steamer plate (patrum) from steamer and let it cool before scooping idli out.

  11. Serve it warm with coconut chutney, chutney pudi and sambar

NOTES
  • Idli by itself may taste slightly bitter at the end but will taste good when eaten with condiments.
