Sticky Date Pudding - Vegan

Get ready to date in cold winter. I have a perfect partner for you. It is sweet, warm, and gingerly dressed in decadent caramel sauce. Elegance with comfort.
~ "Sticky Date Pudding” ~

I don’t know why but when temperature drops and the weather gets chilly, I start craving for a warm dessert. Do you get the same desire? If yes, then you must try this Vegan Sticky Date Pudding. It is super soft, moist, spongy, and sweet with a hint of ginger spice. Oh yes, do not forget to pour caramel sauce over the date pudding. It is a marriage made in heaven.

INGREDIENTS
  • 300 gms / 2 Cups Pitted Dates 

  • 250 ml / 1 Cup Boiling water 

  • 1 tsp Baking soda

  • ¼ tsp Ginger Powder (can increase the amount to 1/2 tsp for stronger ginger flavour)

  • 1 cup Self raising flour

  • 1 cup Brown sugar 

  • ½ cup Oil

  • A Pinch of Salt (this enhances the dessert flavour)

INSTRUCTIONS
  1. Preheat oven to 180°C  and prepare square baking tray with oil spray and lined with baking paper.

  2. Combine dates, boiling water and baking soda in a bowl and allow it to sit for 10 to 15 minutes or until the dates have softened.

  3. In another bowl, seive self-raising flour, ginger powder and add brown sugar, salt and oil

  4. Pour the liquid from the date bowl into the bowl with the flour, and keep the dates separate

  5. In a food processor, add the dates and pulse until pureed.

  6. Scoop date puree into the bowl with the rest of the ingredients.

  7. Use electric beaters to beat the mixture until smooth and creamy. Pour the mixture into the baking tin and allow to bake for 45 minutes until risen and a skewer comes out clean when poked in the centre all the way to the bottom.

NOTES
  • Dimensions of baking tin: 3 inch deep x 7 inch x 7 inch.

  • Serve sticky date pudding warm with caramel sauce (will be linked below).

  • Walnuts or Pecan nuts or Almonds can be added for extra crunch.
