Pickled Radish Salad
This pickled radish salad can get you out of a pickle if you are squeezed for time? A brilliant way to elevate any dish instantly.
If you are like me who desires pickle with every meal but also wants to avoid the copious amount of oil it carries, then this recipe is definitely for you. You can, not only make it in flash and enjoy it without any guilt attached, it is loaded with a ton of nutrition.

INGREDIENTS
Instant Pickling
1 bunch of radishes (5-6 radishes), thinly sliced
1/4 cup apple cider vinegar (or white vinegar)
1 tbsp lemon juice
1/4 teaspoon Himalyan pink salt (adjust as per your taste)
To preserve (add following to above ingredient except radish and boil)
1/2 cup water
1/2 tablespoon sugar (optional)
Garnish
1 tbsp chopped coriander (see post for other options and variations)
INSTRUCTIONS
Instant Pickle Salad
Wash radishes and thinly slice them into circular discs.
Place sliced radishes in a non-metallic bowl.
Add Apple cider vinegar, lemon juice and salt to the bowl filled with radish.
Mix all ingredients using non-metallic spoon.
Let it sit for 5 mins to cure.
Garnish with chopped coriander.
Enjoy.
To preserve for longer period.
Place sliced radishes and any other vegetables and spices of your choice in a sterilised glass jar.
Combine apple cider vinegar, water, lemon juice, salt, sugar(optional) in a saucepan.
Bring it to boil and let it simmer for 2-3 minutes.
Pour hot brine over radishes in the jar.
Ensure radishes and other ingredients are well submerged and covered with the brine.
Cover the jar with an airtight lid.
Allow it to cool to room temperature before storing it in the refrigerator.
NOTES
To increase shelf life, it is important radishes and other ingredients are always covered with the brine and stored in refrigerator.
