Quinoa - Sweet potato salad

Looking for new ways to add superfood Quinoa into your daily diet, here is a delicious wholesome Quinoa sweet potato salad. It is not only healthy but surprisingly filling.

Quinoa in recent years has become a common ingredient of my family's daily diet. Mainly due to its high nutritional value and fibre. Quinoa is one of the few plant-based foods considered to provide complete protein sources.

Who said salads are boring? This salad is certain to convert them into salad lovers. No one can get past this flamboyant platter of goodness. Make it for lunch or as a side dish.

INGREDIENTS
  • 1 cup Tricolour Quinoa

  • 2 cup Water

  • 1 tsp Pink Himalayan Salt

  • 3 tbsn Oil (Any flavourless oil)

  • 2 large long sweet potatoes peeled and diced

  • 1 medim size red onion sliced lengthwise

  • 1 large lebanese cucumber diced or rolled into rosettes

  • 10 yellow cherry tomatoes halved

  • 10 red cherry tomatoes halved

  • 2 handful baby spinach chopped

  • 1 large avocado sliced/diced

  • 1/4 cup Roasted pepper chashews or any other nuts (optional)

  • 4 tbsn Classic vinaigrette (checkout my Classic vinaigrette recipe)

INSTRUCTIONS

QUINOA

  1. Heat oil in Sauce pan. Add Quinoa to the hot oil and stir.

  2. Roast quinoa until it smells nutty.

  3. Add water and salt to taste.Cover and simmer on medium flame for 20 minutes.

  4. Turn off the gas and let it sit for 5 minutes.

  5. Open the lid and fluff quinoa using spoon or fork.


BAKING SWEET POTATO

  1. Preheat oven at 180°C

  2. Peel and dice Sweet potato to 1 cm cubes

  3. Spray oil or coat sweet potato cubes with oil.

  4. Spread sweet potato on baking tray ensuring they are not overlapping.

  5. Place the sweet potato tray in oven to bake for 20 to 30 minutes.

  6. Check sweet potato is cooked by inserting knife in sweet potato cube and it cuts through without any resistence.


ARRANGING SALAD PLATTER

  1. Allow quinoa and sweet potato to cool completely. 

  2. Spread quinoa in the platter (refer to post for pics).

  3. Place all chopped veggies, coooked sweet potatoes over the quinoa along the brim of the bowl.

  4. Pour classic vi naigrette in small bowl or container and place on quinoa in the center of the platter.


READY TO SERVE

  1. When ready to serve the salad. Mix all the ingredients placed in the salad platter except for Vinaigrette (salad dressing). 

  2. Once all the ingredients are mixed well, drizzle the dressing and give the last mix. 

  3. Enjoy.

NOTES


  • Add dressing to the salad right before serving or else as mentioned earlier, veggies and leaves will wilt and lose its vibrancy.

  • Always remember the use 1:2 of quinoa to water ratio to cook quinoa.

  • 1 cup of uncooked quinoa makes 3 cups of cooked quinoa.
